Our Roots

Meet Geiler Puerto

Geiler Puerto grew up in Mérida, Yucatán, surrounded by the colors, aromas, and traditions of Mexican food.

His father, from Hunucmá, began as a farmer on the rancho before selling tacos out of their home in the 1990s. By the late '90s, he had moved into the meat industry in Cancún, but he never let go of a vision: that his son would one day open a restaurant in Canada.

His mother, originally from Mexico City, brought her own flavors and influences into the home, blending the richness of central Mexican cuisine with Yucatecan traditions. Together, his parents inspired a love for food that was never just about eating — it was about family, culture, and a way of life.

The Journey

Carrying the Dream Forward

In 2013, Geiler arrived in London, Ontario, to study culinary arts at Fanshawe College. After years of learning, working in kitchens, and gaining experience in the food service industry, he began to shape his own vision of what authentic Mexican street food could look like in his new home.

With the launch of El Chilaquil, Geiler honored both his heritage and his father's dream. Today, every taco, quesadilla, and churro served from the truck is a tribute to his family's journey — food made with heart, tradition, and pride.

Decked out in colourful Mexican art featuring sugar skulls, guitars, and our mascot chihuahua, the El Chilaquil truck brings the party wherever it goes. We're fully equipped for on-site cooking, so every taco, quesadilla, and churro is made fresh right in front of you.
